  • cooking oil Canola or vegetable oil for frying.

  • 1 teaspoon garlic powder For flavor enhancement.

Instructions
 

Preparation

  • Flatten each chicken cutlet between two pieces of plastic wrap using a meat mallet until they are about 1/2 inch thick.
  • Season the flour with salt, pepper, and optional Italian seasoning in a shallow dish.
  • Beat the eggs in a wide bowl until frothy.
  • Pour breadcrumbs into a third bowl and mix in any additional spices like garlic powder.

Dredging

  • Dredge each chicken cutlet first in the seasoned flour, then dip in the beaten eggs, and coat in breadcrumbs, pressing gently to adhere.

Frying

  • Heat enough oil in a large skillet over medium-high heat until hot.
  • Carefully place the breaded chicken cutlets into the hot oil and fry for about 3-4 minutes on each side, or until golden brown.
  • Remove the cooked schnitzels and drain on a paper towel-lined plate.

Serving

  • Squeeze lemon juice over the schnitzel and garnish with fresh parsley before serving.

Notes

Keep an eye on the oil temperature to ensure even cooking. Use an airtight container for leftovers, which can be stored in the fridge for up to 3 days. To reheat, bake in the oven at 350°F for 10-15 minutes.
