Main Ingredients

  • 2 pieces chicken breasts Use skinless for a healthier option.
  • 2 cups fresh spinach
  • 1 cup mushrooms, sliced Any type of mushrooms can be used.
  • 1 cup cream cheese Make sure it's softened for easier spreading.
  • 1 cup shredded mozzarella cheese
  • 2 cloves garlic, minced
  • to taste Salt and pepper Adjust according to preference.
  • 2 tablespoons olive oil For cooking the mushrooms and spinach.

Instructions
 

Preparation

  • Preheat your oven to 375°F (190°C).
  • In a large skillet, heat olive oil over medium heat.
  • Add minced garlic and sliced mushrooms, and sauté until the mushrooms are soft.
  • Add the spinach and cook until wilted.
  • In a baking dish, place the chicken breasts and season with salt and pepper.
  • Spread the mushroom and spinach mixture on top of the chicken.
  • Top with cream cheese and mozzarella cheese.

Cooking

  • Bake in the preheated oven for 25-30 minutes or until the chicken is cooked through.

Serving

  • Serve warm, with a side of salad or steamed vegetables if desired.

Notes

For added flavor, consider marinating the chicken before cooking. Use frozen spinach if fresh is not available; thaw and drain it well beforehand. Adjust the amount of cheese for creaminess.
