  • 2 cups Cooked chicken, shredded
  • 1 cup Onions, chopped
  • 1 cup Carrots, chopped
  • 1 cup Celery, chopped
  • 2 cups Potatoes, diced
  • 1/2 cup Butter
  • 1/4 cup Flour
  • 2 cups Chicken broth
  • 1 teaspoon Salt
  • 1/2 teaspoon Black pepper
  • 1 teaspoon Garlic powder
  • 2 cups Stuffing mix
  • 1/4 cup Parsley, chopped Fresh herbs bring a refreshing touch; consider adding rosemary or thyme.

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large skillet over medium heat, melt the butter.
  • Add the chopped onions, carrots, and celery to the skillet. Sauté until tender, about 5-7 minutes.
  • Sprinkle the flour into the skillet with the sautéed vegetables and stir for 1-2 minutes.
  • Gradually whisk in the chicken broth while continuously stirring until smooth and thick. Allow to simmer.
  • Season the sauce with salt, pepper, and garlic powder.
  • In a large bowl, combine the shredded chicken, diced potatoes, and the prepared sauce. Stir gently.
  • Transfer the chicken mixture into a greased casserole dish and spread evenly.
  • Top the chicken mixture with the stuffing mix, spreading it evenly.
  • Bake in the preheated oven for 30-35 minutes until bubbly and golden on top.
  • Let the casserole rest for a few minutes before serving.

Notes

For crispier stuffing, toss it with a bit of melted butter before adding. Use bone-in chicken for more flavor, and always taste as you go for seasonings.
