Ingredients
  

For the Filling

  • 8 oz Cream cheese
  • ½ cup Sour cream
  • 2 cups Diced cooked chicken
  • 1 cup Shredded cheddar cheese
  • 1 cup Shredded pepper jack cheese

For the Taquitos

  • 10-12 pieces Flour or corn tortillas
  • As needed Oil for frying

Instructions
 

Preparation of Filling

  • In a large mixing bowl, combine cream cheese and sour cream, mixing until smooth.
  • Add diced cooked chicken, shredded cheddar cheese, and shredded pepper jack cheese. Mix until well combined.

Preparation of Tortillas

  • Warm tortillas in a microwave or on a skillet until pliable.
  • If using corn tortillas, warm them in oil to make them flexible.

Filling and Rolling Taquitos

  • Take a tortilla and place 2-3 tablespoons of filling on the lower third, rolling tightly while folding in the sides.
  • Repeat with remaining tortillas and filling.

Frying Taquitos

  • Heat oil in a large skillet over medium-high heat until hot.
  • Carefully add the rolled taquitos seam side down and fry for 3-4 minutes on each side until golden brown.
  • Transfer to a plate lined with paper towels to drain excess oil.

Serving

  • Prepare dipping sauces such as salsa or guacamole.
  • Gather family around to enjoy and let them customize with toppings like diced tomatoes or fresh cilantro.

Notes
