Ingredients
  

For the casserole

  • 1 can (10.5 ounce) condensed cream of chicken soup
  • 1 cup sour cream
  • 1/2 cup milk
  • 2 cups frozen peas and carrots
  • 3 cups rotisserie chicken (diced) Can use fresh cooked chicken if preferred.
  • 1 pkg ranch seasoning or 2 tablespoons homemade
  • 2 cups colby jack cheese (shredded)
  • 1 bag (32 ounce) frozen tater tots

Instructions
 

Preparation

  • Preheat the oven to 400 degrees Fahrenheit.
  • In a large bowl, add the cream of chicken soup, sour cream, milk, peas and carrots, ranch seasoning, diced chicken, and cheese. Mix until everything is combined well.
  • Spread the mixture into a 9×13 baking pan or a 12-inch oven-safe skillet.
  • Top the mixture with frozen tater tots.

Baking

  • Bake for 35-40 minutes or until the tater tots are golden brown and bubbly.
  • Remove from the oven and serve!

Notes

To serve, enjoy the casserole hot from the oven. It can be served as is or with a side salad. Add a dollop of sour cream or fresh herbs for extra flavor. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
