Ingredients
  

Casserole Base

  • 1 can condensed cream of chicken soup 10.5 ounces
  • 1 cup sour cream
  • 1/2 cup milk
  • 2 cups frozen peas and carrots Can substitute with other frozen vegetables.
  • 3 cups rotisserie chicken, diced
  • 1 pkg ranch seasoning or 2 tablespoons homemade
  • 2 cups colby jack cheese, shredded Can use different cheese varieties.
  • 1 bag frozen tater tots 32 ounces

Instructions
 

Preparation

  • Preheat the oven to 400 degrees Fahrenheit.
  • In a large bowl, combine the cream of chicken soup, sour cream, milk, peas and carrots, ranch seasoning, diced chicken, and cheese. Mix until well combined.
  • Spread this mixture into a 9x13 baking pan or a 12-inch oven-safe skillet.
  • Top the mixture with frozen tater tots.

Baking

  • Bake for 35-40 minutes or until the casserole turns golden brown and bubbly.
  • Remove from the oven and serve hot.

Notes

For extra flavor, experiment with different cheeses or add diced jalapeños for a spicy kick. Leftovers can be stored in an airtight container for up to 3 days and reheated in the oven or microwave.
