Ingredients
  

For the chicken mixture

  • 2 tablespoons olive oil
  • 1 large onion, diced
  • 1 15-ounce can stewed tomatoes
  • 1 7-ounce can chipotle peppers in adobo sauce adjust to taste
  • 2 pounds shredded cooked chicken meat can use rotisserie chicken

For serving

  • 16 pieces tostada shells
  • 1/2 cup sour cream

Instructions
 

Preparation

  • Heat the olive oil in a saucepan over medium heat.
  • Add the diced onions and sauté until soft and translucent, about 5 minutes.
  • While the onions cook, purée the stewed tomatoes and chipotle peppers in adobo sauce in a blender.

Cooking

  • Pour the puréed mixture over the onions in the saucepan and add the shredded chicken. Stir everything to combine.
  • Cover the saucepan and let it simmer for 20 minutes.

Serving

  • Mound the chicken mixture onto the tostada shells and garnish with sour cream.

Notes

Serve on a big platter; offer extra toppings like avocado, cheese, or salsa. Store chicken mixture separately from tostada shells to maintain crunch for up to 3 days.
