Ingredients
  

Main Ingredients

  • 1 lb chicken breast, sliced
  • 2 cups mixed vegetables (bell peppers, broccoli, carrots) Feel free to customize with any veggies you have on hand.

Sauce and Seasoning

  • 2 tablespoons soy sauce Adjust to taste.
  • 1 tablespoon olive oil For cooking the chicken.
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, minced
  • to taste Salt and pepper

For Serving

  • Cooked rice or noodles For serving.

Cooking

  • Heat the olive oil in a large skillet over medium heat.
  • Add the sliced chicken breast and cook until browned and cooked through, about 5-7 minutes.
  • Add the minced garlic and ginger, and stir for 1 minute.
  • Add the mixed vegetables and stir-fry for another 5 minutes until they are tender but still crisp.
  • Pour in the soy sauce, stir to combine, and cook for another 2 minutes.
  • Season with salt and pepper to taste.
  • Serve hot over cooked rice or noodles.

Notes

For quick prep, buy pre-sliced chicken and pre-cut mixed vegetables. You can also use frozen vegetables if thawed and drained. For a vegetarian version, substitute tofu for chicken.
