Ingredients
  

For the Chicken

  • 10 pieces chicken wings, cut in half
  • 6 pieces mushrooms Any variety can be used.
  • slices Ginger Fresh ginger is preferred.
  • 2 tbsp soy sauce
  • 1 tbsp oyster sauce
  • 1 tbsp cornstarch
  • 1/2 tbsp dark soy sauce
  • to taste Salt
  • to taste Black pepper

For Garnishing

  • to taste Green onions, chopped

Instructions
 

Marinating and Frying

  • Marinate the chicken wings in ginger slices, soy sauce, oyster sauce, cornstarch, dark soy sauce, and a pinch of salt for 20 minutes.
  • Heat oil in a pan and add the chicken wings skin-side down.
  • Fry the wings until both sides are golden brown.
  • Add the mushrooms and cook until they are softened.
  • Season with salt and black pepper to taste.
  • Sprinkle with chopped green onions and stir well.
  • Serve and enjoy hot.

Notes

For extra flavor, let the chicken wings marinate for longer, up to 2 hours if possible. Adjust the amounts of soy sauce and oyster sauce to your taste preferences. Ensure the oil is hot before adding the wings for that crispy texture. Experiment with different mushrooms like shiitake or oyster for varied flavors. To store leftovers, cool down to room temperature and keep in an airtight container in the refrigerator for up to 3 days.
