Dressing

Preparation

  • In a large bowl, combine the drained chickpeas, diced cucumber, chopped red bell pepper, finely chopped red onion, and fresh parsley.
  • In a separate small bowl, whisk together the lemon juice and olive oil until well blended.
  • Pour the dressing over the salad mixture and gently toss to combine.
  • Season with salt and pepper to taste.
  • Cover the salad and refrigerate for approximately 30 minutes to allow flavors to meld.
  • Before serving, give the salad a quick toss and serve it in a bowl or on a plate.

Notes

For extra crunch, add finely chopped celery or feta cheese for creaminess. Use fresh lemon zest for a more intense lemon flavor. Pairs well with grilled chicken or fish.
