Ingredients
  

Main Ingredients

  • 1 lb ground beef
  • 1 chopped onion
  • 1 TBSP minced garlic
  • 1 TBSP chili powder
  • 1 tsp paprika
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1 tsp onion powder
  • 1/2 tsp cumin
  • 15 oz can of chili beans
  • 14.5 oz can of diced tomatoes
  • 1.5 cups beef broth
  • 8 oz can of tomato sauce
  • 1 cup rice Rinsed before cooking

Toppings

  • 1.5 cups shredded cheddar cheese
  • Jalapeños To taste
  • Sour cream To taste
  • Hot sauce To taste

Instructions
 

Preparation

  • Rinse one cup of long grain white rice with water and set aside.
  • In a skillet, brown the ground beef with the chopped onion over medium heat.
  • Season the mixture with salt, pepper, paprika, chili powder, onion powder, and cumin.
  • Drain excess grease from the skillet.

Cooking

  • Add minced garlic, diced tomatoes, chili beans, beef broth, tomato sauce, and the rinsed rice to the skillet.
  • Once it begins to bubble, reduce the heat to medium-low, cover with a lid, and cook for about 20 minutes or until the rice is cooked to your liking.
  • Top with shredded cheddar cheese and either place it in the oven to melt the cheese or cover and let it sit on the stove until melted.

Notes

Make sure to rinse the rice before cooking to remove extra starch. Adjust seasonings based on taste—add more chili powder or jalapeños for spiciness. For vegetarian options, substitute meat with TVP or vegetables.
