Meatball Ingredients

  • 2 1/2 pounds ground beef
  • 1/2 cup bread crumbs
  • 1/2 cup dried minced onion
  • 2 tablespoons dried cilantro
  • 2 teaspoons onion powder
  • 2 teaspoons garlic powder
  • 1 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 11 ounces chipotle peppers in adobo sauce finely chopped
  • 1 large egg

Preparation

  • Preheat the oven to 400 degrees F (200 degrees C).
  • In a large bowl, mix together the ground beef, bread crumbs, dried onion, cilantro, onion powder, garlic powder, salt, and black pepper.
  • Finely chop the chipotle peppers and add them along with the adobo sauce and egg to the meat mixture. Mix well until everything is combined.
  • Roll the mixture into 1 1/2 inch meatballs.
  • Heat a skillet over high heat and brown the meatballs for about 3 to 5 minutes, turning them as needed.
  • Transfer the browned meatballs to a rimmed baking sheet and bake in the preheated oven until they are no longer pink in the centers, about 8 to 10 minutes.

Notes

Make sure not to overmix the meat when combining the ingredients. Adjust the spice level by adding more or fewer chipotle peppers based on your taste. You can add some shredded cheese for extra flavor. Leftovers can be stored in an airtight container in the fridge for up to 3 days or frozen for up to 3 months.
