Ingredients
  

Oats Mixture

  • 2.5 cups Chocolate Oath oats Or 2 cups oats with 1 tsp cinnamon and 1/4 tsp salt
  • 1/4 cup cocoa powder
  • 1 teaspoon baking powder

Wet Ingredients

  • 1.5 cups milk Can use almond or non-dairy milk
  • 1/4 cup Greek yogurt Or plant-based yogurt for vegan option
  • 2 eggs Can substitute with flax eggs or applesauce for vegan option
  • 1 tablespoon maple syrup

Fruits

  • 2 over ripe bananas Use very ripe bananas for sweetness

Others

  • cooking spray Cooking spray For greasing the baking dish

Instructions
 

Preparation

  • Preheat the oven to 375°F (190°C). Spray an 8×11 inch baking dish with cooking spray.
  • Place the bananas in the prepared baking dish and mash them well.
  • Add the milk, yogurt, eggs, and maple syrup to the bananas and whisk until everything is combined.
  • Stir in the oats, cocoa powder, and baking powder until well mixed.

Baking

  • Bake uncovered in the preheated oven for 30-35 minutes, or until the top is golden and the mixture is set.
  • Remove from the oven and let it cool for about 5 minutes. Then cut into 6 or 8 slices and serve.

Notes

You can serve the baked oats warm, topped with yogurt, fresh banana slices, or drizzled with extra maple syrup. Store leftovers in an airtight container in the fridge for up to 3-4 days. Reheat in the microwave for 30 seconds.
