  • 4 large Eggs
  • 3/4 cup Granulated Sugar
  • 1/4 cup Water
  • 1 teaspoon Vanilla Extract
  • 3/4 cup All-Purpose Flour
  • 1/4 cup Unsweetened Cocoa Powder
  • 1 teaspoon Baking Powder
  • 1 pinch Salt
  • As needed Powdered Sugar (for dusting)
  • As desired Filling (Whipped Cream or Chocolate Frosting) Fresh whipped cream is recommended for a lighter touch.

Instructions
 

Preparation

  • Preheat the oven to 350°F (175°C).
  • Grease and line a 15×10-inch jelly roll pan with parchment paper.
  • In a large mixing bowl, beat the eggs and granulated sugar together until pale and thickened, about 5 minutes.
  • Stir in the water and vanilla extract until well blended.
  • Sift together the flour, cocoa powder, baking powder, and salt.
  • Gradually fold the dry ingredients into the egg mixture until smooth.
  • Pour the batter into the prepared baking pan, spreading it evenly.

Baking

  • Bake for 12-15 minutes or until a toothpick inserted comes out clean.
  • Remove the cake from the oven and invert it onto a powdered sugar-dusted kitchen towel. Carefully peel away the parchment paper.

Rolling & Filling

  • Roll the warm cake up with the towel and let it cool completely.
  • While the cake cools, whip the heavy cream with some powdered sugar until soft peaks form.
  • Once cooled, gently unroll the cake and spread the filling evenly over the surface.
  • Roll the cake back up carefully without the towel and place it seam-side down on a serving platter.
  • Dust the top with powdered sugar or drizzle with chocolate as desired.

Notes

Chill the filled cake before slicing for cleaner cuts. Ensure your utensils are cold for better whipped cream results. Add espresso powder for enhanced chocolate flavor if desired.
