  • 2 large eggs Bind ingredients and add moisture.
  • 1 cup whole milk Keeps the cake tender and moist.
  • 0.5 cups vegetable oil Adds richness.
  • 2 tsp vanilla extract Adds warm flavor.
  • 1 cup boiling water Creates a thin batter for a moist cake.

Ganache and Frosting Ingredients

  • 1 cup chocolate ganache For the lava filling.
  • 1 cup butter, softened Makes frosting creamy.
  • 4 cups powdered sugar For sweetness in frosting.
  • 0.25 cups unsweetened cocoa powder For additional chocolate flavor in frosting.
  • 2-3 tbsp milk To make frosting light and spreadable.

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • Grease and flour two 9-inch round cake pans.
  • In a large bowl, combine the flour, sugar, cocoa powder, baking powder, baking soda, and salt. Whisk together.
  • Add in the eggs, whole milk, vegetable oil, and vanilla extract. Mix until smooth.
  • Gradually stir in the boiling water to create a thin batter.
  • Divide the batter evenly between the two prepared pans.

Baking

  • Bake for about 30-35 minutes, checking for doneness with a toothpick.
  • Allow the cakes to cool in pans for 10 minutes, then transfer to wire racks.

Filling and Frosting

  • Prepare the ganache by heating 1 cup of heavy cream, then pour over 8 oz of chopped chocolate. Let sit for 5 minutes and stir until smooth.
  • In a mixing bowl, beat softened butter until creamy. Gradually add powdered sugar and cocoa powder until combined. Adjust consistency with milk if needed.

Assembly

  • Place one layer of cake on a serving plate, create a well, and fill with ganache.
  • Top with the second layer of cake.
  • Frost the top and sides of the cake with remaining frosting.
  • Garnish with chocolate shavings.

Serving

  • Slice the cake and enjoy it along with vanilla ice cream or raspberry sauce.

Notes

Ensure ingredients are at room temperature, and check cakes a couple of minutes before baking time. For a deeper chocolate flavor, substitute half of the cocoa powder with dark cocoa powder.
