Ingredients
  

Pancake Batter

  • 2 cups Oath Chocolate Overnight Oats
  • 2.5 cups milk
  • 1 cup Greek yogurt
  • 0.5 cup chia seeds
  • 3 tablespoons maple syrup
  • 1 teaspoon vanilla extract
  • 0.5 cup all-purpose flour Can be substituted with gluten-free flour
  • 1 teaspoon baking powder
  • to taste Unsalted butter For cooking

Instructions
 

Preparation

  • Whisk together the oats, milk, Greek yogurt, chia seeds, maple syrup, vanilla extract, and flour until well mixed.
  • Put the mixture in the fridge overnight to let the oats soak up the moisture.

Cooking

  • Take the mixture out and sprinkle the baking powder on top. Gently fold it in until combined.
  • Heat a bit of butter in a non-stick pan over medium heat.
  • Pour about 1/3 cup of the overnight oats mixture into the pan and cook until bubbles appear on the surface and edges start to set, about 3 minutes.
  • Flip the pancakes and cook for another 3 to 4 minutes until golden-brown.
  • Transfer pancakes to a warm oven or plate. Repeat with remaining batter.

Notes

Serve warm, topped with maple syrup and fresh fruit. Store leftovers in an airtight container in the refrigerator for up to 3 days.
