Ingredients
  

For the Filling

  • 1 cup smooth peanut butter
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup heavy cream whipped to stiff peaks
  • 8 oz cream cheese, softened use room temperature for easy mixing

For the Cake and Frosting

  • 1 cup chocolate chips for the frosting
  • 1 roll chocolate cake fresh to prevent cracking
  • to taste Cocoa powder for dusting before serving

Instructions
 

Preparation

  • In a bowl, mix together the peanut butter, powdered sugar, and vanilla extract until smooth.
  • In another bowl, whip the heavy cream to stiff peaks, then gently fold it into the peanut butter mixture.
  • Carefully unroll the chocolate cake and spread a layer of the peanut butter filling over the cake.
  • Roll the cake back up tightly.
  • In a separate bowl, melt the chocolate chips and mix in the softened cream cheese until smooth, creating a chocolate frosting.
  • Spread the chocolate frosting over the rolled cake.
  • Dust with cocoa powder before serving.
  • Chill for at least an hour before slicing.

Notes

Serve slices with a scoop of vanilla ice cream or a dollop of whipped cream. Store leftovers in an airtight container in the refrigerator for up to three days or freeze individual slices wrapped tightly for longer storage.
