Ingredients
  

For the dough

  • 1 cup butter Should be at room temperature for easy mixing.
  • 1.5 cups sugar
  • 2 pieces eggs
  • 1/4 teaspoon lemon extract
  • 1/2 teaspoon vanilla extract
  • 3 cups flour Sifted with salt and baking soda.
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 2 cups oatmeal Stirred in last.

Preparation

  • Preheat your oven to 375 degrees F (190 degrees C). Lightly grease your baking sheets.
  • In a large bowl, cream together the butter and sugar until smooth.
  • Beat in the eggs, followed by the lemon extract and vanilla extract.
  • In another bowl, sift together the flour, salt, and baking soda.
  • Slowly mix the flour mixture into the butter mixture while mixing continuously.
  • Stir in the oatmeal until it's evenly distributed.
  • Roll the dough on a lightly floured surface to about 1/8 inch thick.
  • Use cookie cutters to cut the dough into fun shapes and place them on the prepared baking sheets.

Baking

  • Bake in the preheated oven for about 10 to 12 minutes, or until the edges begin to brown.
  • Allow the cookies to cool on a rack before frosting.

Notes

Decorate with colorful icing or sprinkles. Store in an airtight container for up to a week or freeze for longer storage. Chill the dough for 30 minutes if it feels too soft to roll out.
