Ingredients
  

For the Steaks

  • 2 New York strip steaks
  • 2 tablespoons Olive oil
  • to taste Salt
  • to taste Pepper
  • 4 tablespoons Garlic herb butter
  • 3 cloves Garlic, minced
  • Fresh herbs (for basting, like thyme or rosemary) I love adding fresh herbs like rosemary—it makes the steaks smell and taste amazing!

Preparation

  • Before we get into the nitty-gritty, you want to pull your New York strip steaks out of the refrigerator and let them sit at room temperature for about 30 minutes.
  • While you’re waiting, go ahead and season the steaks generously with salt and pepper.
  • Preheat your cast iron skillet over medium-high heat.
  • Once your skillet is hot, drizzle in 2 tablespoons of olive oil.

Cooking

  • Place the seasoned strips into the pan and sear for about 4-5 minutes on one side.
  • After about 4-5 minutes, flip the steaks and cook them for another 4-5 minutes for medium-rare doneness.
  • In the final minute of cooking, drop in the garlic herb butter along with the minced garlic.
  • Baste the steaks with the melted butter to add flavor and keep the meat juicy.
  • When your steaks are done cooking, carefully remove them from the skillet and let them rest for at least 5 minutes.
  • Finally, slice the steaks against the grain and serve them with the garlic herb butter drizzled on top.

Notes

If you have leftover herb butter, store it in the fridge for other dishes like vegetables or pasta. A meat thermometer is helpful to ensure perfect doneness.
