  • 2 cups coleslaw mix Pre-packaged mixes are available or can be made from scratch.
  • 2 cups cooked pasta (e.g., rotini or fusilli) Cook and cool the pasta before adding to the salad.
  • 1 cup cherry tomatoes, halved
  • 1/2 cup green onions, chopped

Dressing Ingredients

  • 1/2 cup mayonnaise Can substitute with Greek yogurt for a lighter version.
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon Dijon mustard
  • to taste Salt and pepper

Preparation

  • In a large bowl, combine the coleslaw mix and cooked pasta.
  • Add cherry tomatoes and green onions.
  • In a separate bowl, mix together the mayonnaise, apple cider vinegar, and Dijon mustard until smooth.
  • Pour the dressing over the salad and toss until everything is well coated.
  • Season with salt and pepper to taste.
  • Chill in the refrigerator for at least 30 minutes before serving.

Notes

Store any leftovers in an airtight container in the refrigerator. It should be eaten within 3 days for the best taste and texture. For variations, consider adding grilled chicken, bacon bits, or shredded carrots for extra crunch.
