Ingredients
  

Pasta and Base

  • 8 oz Pasta (elbow or rotini) Cook until al dente for best texture.
  • 4 cups Coleslaw mix Brings freshness to the dish.
  • 1 cup Cherry tomatoes, halved Adds vibrant colors.
  • 1/2 cup Red onion, thinly sliced Adjust amount based on preference as it can be strong.

Dressing

  • 1/2 cup Mayonnaise Base of the dressing.
  • 2 tablespoons Apple cider vinegar Adds tanginess.
  • 1 tablespoon Sugar Balancing sweetness.
  • Salt and pepper To taste.

Instructions
 

Cooking the Pasta

  • Bring a pot of salted water to a boil.
  • Add the pasta and cook according to package instructions until al dente.

Draining and Rinsing

  • Drain the pasta in a colander and rinse under cold water to stop the cooking process.

Preparing the Vegetables

  • In a large bowl, pour in the coleslaw mix.
  • Slice the cherry tomatoes in half and add them.
  • Thinly slice the red onion and add to the bowl.

Mixing the Dressing

  • Whisk together mayonnaise, apple cider vinegar, sugar, salt, and pepper in a separate bowl.

Combining the Ingredients

  • Add the cooled pasta to the vegetable mix and pour the dressing over it.
  • Toss everything well to ensure it is evenly coated.

Chilling

  • Cover the bowl and refrigerate for at least 30 minutes to allow flavors to meld.

Serving

  • Stir the salad and taste for seasoning before serving.
  • Serve in a large bowl and enjoy!

Notes

You can enhance flavor by adding chopped fresh herbs, sunflower seeds, or nuts right before serving. Store leftovers in an airtight container in the refrigerator and revive with a splash of mayonnaise or vinegar if needed.
