Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large mixing bowl, combine the Cool Whip, sugar, egg, and vanilla extract until smooth and creamy.
  • In a separate bowl, whisk together the flour, baking powder, and salt.
  • Gradually add the dry ingredients to the wet mixture, stirring gently until just combined.
  • Fold in the sprinkles.
  • Line a baking sheet with parchment paper.
  • Scoop spoonfuls of dough onto the baking sheet, leaving space between each cookie.
  • If desired, add more sprinkles on top of each cookie.
  • Bake for 10 to 12 minutes until the edges are lightly golden.
  • Let the cookies cool on the baking sheet for about 5 minutes, then transfer them to a wire rack to cool completely.

Notes

Ensure not to overmix the dough for the lightest texture. For variation, try almond extract instead of vanilla, or refrigerate the dough for 30 minutes before baking for a chewier texture.
