Preparation

  • In a skillet over medium heat, cook the ground beef until it's no longer pink, about 5-7 minutes. Break it up as you go to achieve nice crumbles.
  • Once browned, add the taco seasoning and stir to combine. Let it simmer for a few minutes to meld the flavors.
  • In a separate large skillet, heat the oil over medium-high heat, ensuring enough oil to fry the tortillas.

Cooking

  • Fry the corn tortillas in the hot oil until crispy and golden, about 2-3 minutes per side. Watch closely to prevent burning.
  • Build the pizzas by starting with a fried tortilla. Spread refried beans, add a layer of seasoned beef, and sprinkle both cheddar and Monterey Jack cheese.
  • Top with another tortilla and repeat the layering process until you reach 2-3 layers.
  • Return the double-decker tortillas to the hot oil and fry until the cheese melts and everything is bubbly, about 2-3 more minutes.

Serving

  • Remove from the skillet and let drain on paper towels. Top with diced tomatoes, green onions, black olives, jalapenos, and any additional toppings of your choice.
