Preparation

  • Gather your ingredients and equipment. You will need a large pot, a cutting board, and a sharp knife. Also, having a sturdy wooden spoon for stirring will make things much easier.
  • Start by melting the butter in your large pot over medium heat. Once the butter is bubbling beautifully, toss in your diced onions and minced garlic. Cook them until they are softened and fragrant, which usually takes about 3-5 minutes.
  • Next, add the diced potatoes. Stir them in and let them cook for a few minutes to get a nice bit of color.
  • Add the corn and vegetable or chicken broth to the pot. Bring everything to a joyful simmer and let it cook for about 15-20 minutes, or until the potatoes are tender.
  • After the potatoes are tender, use an immersion blender to partially blend the chowder for a creamy texture while leaving some whole corn kernels.
  • Add your chosen milk or cream, stir it in, and season with salt and pepper to taste. Let the chowder warm through for another 5 minutes on the stove.
  • Ladle the chowder into bowls and garnish with chopped green onions or crispy bacon, if you like.

Notes

For perfect results, sauté the onions and garlic until golden to deepen the flavor. Store leftovers in an airtight container in the refrigerator for up to 3 days.
