  • 4 cups fresh corn kernels
  • 4 cups vegetable broth
  • 1 cup heavy cream
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 medium potatoes, diced
  • Salt and pepper to taste
  • Fresh herbs for garnish (optional)

Preparation

  • In a large pot, sauté onion and garlic until translucent.
  • Add diced potatoes and vegetable broth, and bring to a boil.
  • Reduce heat and simmer until potatoes are tender, about 15 minutes.
  • Stir in corn and heavy cream, and cook for another 5-10 minutes.
  • Season with salt and pepper.
  • Serve warm, garnished with fresh herbs if desired.

Notes

For best flavor, use fresh corn, but frozen corn works well too. Adjust the thickness of the chowder by adding more or less cream. Add diced bacon or smoked sausage for a smoky flavor. Blend part of the chowder for a smoother texture if preferred. Store leftovers in an airtight container in the refrigerator for up to 3 days or freeze for up to 3 months.
