  • 3 medium potatoes, diced Makes the chowder hearty and filling.
  • 4 cups vegetable or chicken broth Gives the broth a rich, savory flavor.
  • 1 cup heavy cream or milk Makes the chowder creamy.
  • 2 tablespoons butter Adds richness.
  • to taste Salt and pepper Essential for seasoning.
  • optional Chopped chives or bacon for garnish Adds extra touch of flavor.

Instructions
 

Preparation

  • Gather all your ingredients. Dice your onion, mince your garlic, and chop the potatoes.
  • In a large pot, melt the butter over medium heat.

Cooking

  • Add the diced onion and garlic into the pot. Sauté until soft and fragrant, about 5 minutes.
  • Add the diced potatoes and sauté for another 3-4 minutes.
  • Pour in the vegetable or chicken broth and bring it to a boil, then reduce the heat to a simmer.
  • Cook for about 15-20 minutes, or until the potatoes are tender.
  • Stir in the corn kernels and let it cook for another 5-10 minutes.
  • Slowly add in the heavy cream or milk, stirring gently to combine.
  • Season to taste with salt and pepper.
  • Ladle the chowder into bowls and garnish with chives or bacon if desired.

Notes

To thicken the chowder, mash some of the potatoes after they’ve cooked. Consider adding smoked paprika or cayenne for extra flavor. Serve with crusty bread or a salad.
