  • 1/2 cup all-purpose flour Can substitute with gluten-free flour for a gluten-free version.
  • 2 large eggs
  • 1/4 cup milk
  • 1/4 cup chopped green onions
  • 1 teaspoon baking powder
  • Salt and pepper to taste
  • Oil for frying Ensure oil is hot enough before frying.

Preparation

  • In a bowl, combine corn, flour, eggs, milk, green onions, baking powder, salt, and pepper. Mix until well combined.
  • Heat oil in a frying pan over medium heat.
  • Drop spoonfuls of the batter into the hot oil and fry until golden brown, about 3-4 minutes on each side.
  • Remove from oil and drain on paper towels.
  • Serve warm.

Notes

Corn fritters are best served warm. You can enjoy them plain or with a dipping sauce like sour cream or salsa. They also go well as a side dish with grilled meats or salads.
