Ingredients
  

Dry Ingredients

  • 1 cup sweet corn (fresh or canned)
  • 1/2 cup all-purpose flour
  • 1/4 cup cornmeal
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp paprika

Wet Ingredients

  • 1 egg
  • 2 tbsp milk

Frying

  • Oil for frying As needed

Preparation

  • In a mixing bowl, combine sweet corn, flour, cornmeal, baking powder, salt, black pepper, and paprika.
  • In a separate bowl, whisk together the egg and milk.
  • Add the egg mixture to the dry ingredients and stir until combined.

Cooking

  • Heat oil in a frying pan over medium heat.
  • Drop spoonfuls of the batter into the hot oil and fry until golden brown on both sides, about 3-4 minutes.
  • Remove from oil and drain on paper towels.

Notes

Serve warm, straight from the pan. Great with dipping sauce like sour cream, salsa, or sweet chili sauce. Store leftovers in an airtight container in the refrigerator for up to 3 days.
