Ingredients
  

Main ingredients

  • 1 can whole kernel corn, drained Use canned corn, well-drained.
  • 2 pieces eggs
  • 1/2 cup flour
  • 1 tsp baking powder
  • 1/2 cup shredded cheese Choose your favorite type of cheese.
  • 1 pat butter
  • 2 tbsp oil For frying.
  • 1/4 cup chopped parsley
  • to taste Salt & pepper Adjust according to preference.

Preparation

  • In a bowl, beat the eggs with salt and pepper.
  • Whisk in the flour and baking powder until smooth.
  • Stir in the corn and cheese.

Cooking

  • Heat the butter and oil in a fry-pan until bubbly.
  • Drop spoonfuls of the mixture into the pan.
  • Cook until golden, then flip and cook the other side.
  • Drain on paper towels and serve!

Notes

Corn fritters are best served hot and fresh. They pair nicely with sour cream or hot sauce. To store leftovers, refrigerate in an airtight container for up to three days.
