Ingredients
  

Main Ingredients

  • 1 package Cornbread mix
  • 1 lb Ground beef Can substitute with ground turkey.
  • 1 packet Taco seasoning
  • 1 cup Salsa
  • 1 can Black beans (drained)
  • 1 cup Shredded cheese

Toppings

  • Sour cream For serving
  • Chopped green onions For serving

Instructions
 

Preparation

  • Preheat your oven to 400°F (200°C).
  • In a skillet over medium heat, cook the ground beef until browned, about 5-7 minutes.
  • Drain the excess fat from the cooked beef.
  • Stir in the taco seasoning and salsa, and let it simmer for a few minutes.
  • Grease a 9x13 inch baking dish.
  • Spread the beef mixture evenly across the bottom of the baking dish.
  • Prepare the cornbread mix according to package instructions.
  • Pour the cornbread batter over the beef layer and spread it evenly.

Baking

  • Bake in the preheated oven for about 25-30 minutes or until golden brown.
  • Stir in black beans and sprinkle cheese on top, then return to the oven for 5-10 minutes until cheese melts.
  • Let it cool for about 10 minutes before serving.
  • Serve warm topped with sour cream and chopped green onions.

Notes

Using a glass baking dish helps to see the golden color underneath. Always taste the beef mixture before adding the cornbread batter for additional seasoning if desired.
