  • In a large pot, combine the beef broth and chopped cabbage.
  • Bring to a boil over medium-high heat.
  • Once boiling, reduce the heat and let it simmer until the cabbage is tender, about 10-15 minutes.
  • Add the chopped corned beef and heat through for another 5 minutes.
  • Serve hot.

Notes

Serve hot in bowls, optionally adding fresh bread on the side. For extra flavor, consider adding a sprinkle of black pepper or fresh herbs. Store leftovers in an airtight container in the refrigerator for 3-4 days or freeze for up to 3 months. For a thicker soup, blend a portion and mix back in.
