Preparation

  • Start by boiling the eggs, then let them cool and peel them.
  • In a bowl, mash the hard-boiled eggs and mix in the cottage cheese.
  • Finely chop the celery, red onion, and chives, then add them to the egg and cottage cheese mixture.
  • Season with salt, pepper, and add a splash of lemon juice for some tang, if desired.
  • Optionally, you can add a little vegetable or olive oil for extra creaminess.
  • Mix all the ingredients until well combined and serve chilled.

Notes

To store, place the salad in an airtight container in the refrigerator for about 3 to 4 days. Stir well before serving leftovers. Use fresh ingredients and adjust seasoning according to your taste. Experiment with ingredients like diced pickles or bell peppers for added crunch, or incorporate different cheeses for variety.
