Country Fried Chicken and Gravy

Ingredients
  

For the Chicken

  • 1 pound chicken breast
  • Salt, pepper, garlic powder (to taste) Seasoning for the chicken
  • 2/3 cup oil For frying
  • 2 tablespoons butter For frying
  • 1 cup flour For dredging the chicken
  • 2 teaspoons salt
  • 2 teaspoons pepper
  • 2 teaspoons paprika
  • 2 teaspoons garlic powder
  • 2 teaspoons steak seasoning
  • 1 cup milk For the coating
  • 1 whole egg For the coating

For the Gravy

  • 1/3 cup grease from frying chicken
  • 1/3 cup flour For thickening gravy
  • 3 cups milk For making gravy
  • Additional salt and pepper (to taste) For seasoning gravy

Instructions
 

Preparation

  • Cut chicken breasts in half lengthwise to make them thinner. Season the chicken on both sides with some salt, pepper, and garlic powder.
  • In a large container, mix together 1 cup of flour, 2 teaspoons each of salt, pepper, paprika, garlic powder, and steak seasoning.
  • In a separate bowl, mix together 1 cup of milk and 1 egg, then set aside.

Cooking

  • Heat a large skillet over medium heat and add 2/3 cup of oil and 2 tablespoons of butter.
  • Dredge the chicken in the flour mixture, then dip in the egg mixture, and coat again with the flour mixture, shaking off any excess flour.
  • Cook the chicken in the hot skillet for a few minutes on each side until golden brown and it reaches an internal temperature of 165°F. Remove the cooked chicken and place it on a clean plate lined with paper towels.

Gravy Preparation

  • To make the gravy, remove most of the oil from the skillet, keeping about 1/3 cup in the skillet.
  • Add 1/3 cup of flour and stir well, cooking for 1-2 minutes.
  • Slowly add 3 cups of milk, stirring well, and cook on low heat until the gravy thickens. Season the gravy to taste with salt and pepper.

Notes

For extra crispy chicken, let the coated chicken rest for about 10 minutes before frying. Make sure the oil is hot enough before adding chicken to cook evenly.
