Main Ingredients

  • 8 oz Bacon Adds smoky, salty flavor.
  • 1 lb Ground beef Forms the hearty base.
  • 12 oz Kielbasa smoked sausage Adds smokiness and flavor.
  • 1 large Onion Adds sweetness.
  • 1 cup Bell peppers (mixed colors) Adds vibrancy.
  • 2 large Carrots Provides natural sweetness.
  • 1 cup Corn For crunch.
  • 14.5 oz Canned diced tomatoes Adds liquid and texture.
  • 1 can Kidney beans For a filling component.

Spices and Liquids

  • 1 tbsp Chili powder
  • 1 tbsp Cumin
  • 1 tbsp Smoked paprika
  • 4 cups Beef broth To combine flavors.
  • to taste Salt and pepper For seasoning.

Instructions
 

Preparation

  • In a large pot, heat bacon over medium heat until crispy. Remove and set aside, leaving drippings in the pot.
  • Add ground beef and sliced kielbasa to the pot, cooking until browned.
  • Stir in the chopped onion, bell peppers, and carrots, cooking until soft and onions are translucent.
  • Add corn, diced tomatoes, kidney beans, chili powder, cumin, smoked paprika, and beef broth. Stir well.
  • Bring to a boil, then reduce heat to low and let simmer for about 30 minutes.
  • Taste and season with salt and pepper as needed.
  • Serve in bowls and top with crispy bacon pieces.

Notes

Feel free to modify the recipe by adding vegetables you have on hand. Leftovers can be stored in an airtight container for up to three days.
