Ingredients
  

Meats

  • 4 slices bacon Adds a smoky flavor.
  • 1 pound ground beef Use good quality beef for richer taste.
  • 1 pound Kielbasa smoked sausage, sliced Gives depth and spice to the stew.

Beans & Vegetables

  • 1 can (15 oz) kidney beans, drained and rinsed Packed with protein.
  • 1 can (15 oz) black beans, drained and rinsed Provides unique flavor.
  • 1 can (15 oz) diced tomatoes Adds juicy, tangy goodness.
  • 2 cups corn (fresh or frozen) Balances the flavors.
  • 1 large onion, chopped Adds aromatic base.
  • 2 cloves garlic, minced Enhances overall flavor.

Liquids & Seasonings

  • 2 cups beef broth Provides the necessary liquid.
  • 2 teaspoons chili powder Adds a warming kick.
  • 1 teaspoon cumin Adds warm earthiness.
  • 1 teaspoon smoked paprika Adds depth of flavor.
  • to taste salt and pepper Essential for rounding off flavors.

Instructions
 

Preparation

  • Before you start cooking, chop your onion and garlic, slice the Kielbasa, and measure out your beans.
  • Cook the bacon in a large pot over medium heat until crisp, about 5-7 minutes.
  • Remove bacon from the pot and set it aside, keeping the bacon fat in the pot.

Cooking

  • Add ground beef and sliced Kielbasa to the pot and cook until the beef is browned, about 8-10 minutes.
  • Stir in chopped onion and minced garlic, sauté until the onion becomes translucent, about 3-5 minutes.
  • Add kidney beans, black beans, diced tomatoes, and corn into the pot and mix well.
  • Pour in beef broth along with chili powder, cumin, smoked paprika, salt, and pepper. Stir to combine.
  • Bring the stew to a boil before reducing the heat to low and cover to let it simmer for about 30 minutes.
  • Crumble bacon back into the pot just before serving.

Serving

  • Ladle Cowboy Stew into bowls, top with fresh parsley, and enjoy!

Notes

Start with good-quality ingredients for best flavor. Consider adding fresh herbs toward the end for a burst of freshness. Leftovers can be thickened with cornstarch.
