  • 1 large onion, diced
  • 3 medium carrots, diced
  • 1 cup frozen peas

  • 1 cup beef broth

Mashed Potato Topping

  • 4 large potatoes, peeled and quartered
  • 1/2 cup milk For creaminess.
  • 4 tablespoons butter Makes it more flavorful.

Crust

  • 1 sheet puff pastry, thawed For the flaky topping.
  • 1 large egg (for egg wash) To achieve a golden crust.

Instructions
 

Prepare the Filling

  • Brown the ground beef in a large skillet over medium heat, breaking it apart as it cooks. Drain any excess fat.
  • Add the onion, carrots, and garlic. Cook for about 5 minutes, until the veggies are tender.

Add Flavor

  • Stir in tomato paste, beef broth, Worcestershire sauce, thyme, and season with salt and pepper. Let simmer for 10-15 minutes until thickened.

Finish the Filling

  • Add the frozen peas last and stir to heat them through.

Cook the Potatoes

  • Boil quartered potatoes in salted water until tender, about 15-20 minutes.
  • Drain and return to pot, add milk and butter, then mash until smooth and creamy, seasoning with salt and pepper.

Assemble the Pie

  • Preheat oven to 400°F. Pour meat mixture into a baking dish, then spoon the mashed potatoes over the top.
  • Cover with puff pastry, trimming excess, brushing with egg wash, and scoring the top.

Bake

  • Bake for 25-30 minutes until the pastry is golden. Let cool for 10 minutes before serving.

Notes

For extra creamy potatoes, consider mixing in cheese. Use leftover veggies for added flavor and to clean out your fridge. Serve with a side salad or crusty bread for dipping.
