Ingredients
  

For the stuffing

  • 8 oz Cream cheese, softened
  • 1 cup Fresh crab meat, picked over for shells Fresh is ideal, but canned can be used
  • 1/2 cup Grated Parmesan cheese
  • 2 tbsp Fresh parsley, chopped
  • 1 clove Garlic, minced
  • 1/2 tsp Old Bay seasoning (optional) Adds a nice kick
  • Salt and pepper to taste

For the mushrooms

  • 16 large Mushrooms (preferably cremini or button) Stems can be saved for stock or added to the filling
  • 1 tbsp Olive oil (for greasing the baking dish)

Instructions
 

Preparation

  • Preheat your oven to 375°F.
  • Gently clean the mushrooms with a damp paper towel.
  • Carefully twist off the stems of the mushrooms.
  • In a mixing bowl, combine the softened cream cheese, fresh crab meat, grated Parmesan cheese, chopped parsley, minced garlic, and Old Bay seasoning with a good pinch of salt and pepper.
  • Mix everything together until well combined.
  • Generously stuff each mushroom cap with the crab mixture.
  • Drizzle olive oil in your baking dish to coat the bottom.
  • Place the stuffed mushrooms in the baking dish snugly together.

Baking

  • Bake for 20-25 minutes or until golden brown and filling is bubbly.
  • Allow the stuffed mushrooms to cool slightly before serving.

Notes

Storage: If there are leftovers, store in an airtight container in the fridge for 2-3 days. Reheat in the oven at 350°F for about 10 minutes.
