Ingredients
  

For the base

  • 2 tablespoons Olive oil
  • 1 large Onion, diced
  • 2 cloves Garlic, minced
  • 8 ounces Cremini mushrooms, sliced

For the soup

  • 4 cups Chicken broth
  • 1 teaspoon Dried marjoram
  • 1 teaspoon Dried thyme
  • 1 cup Heavy cream
  • To taste Salt and pepper

Instructions
 

Preparation

  • Heat 2 tablespoons of olive oil in a large pot over medium heat.
  • Add your diced onion and minced garlic, stirring occasionally for about 5 minutes until the onion becomes translucent.
  • Add the sliced cremini mushrooms and sauté for about 7-10 minutes until browned and moisture has evaporated.
  • Pour in 4 cups of chicken broth and stir gently.
  • Sprinkle in 1 teaspoon of dried marjoram and 1 teaspoon of dried thyme, then taste as you go.
  • Bring to a gentle boil, then reduce heat and let it simmer for 15 minutes.
  • Add in 1 cup of heavy cream and stir gently to combine.
  • If desired, use an immersion blender to puree the soup to your desired consistency.
  • Adjust seasoning with salt and pepper to taste.
  • Serve the soup in bowls and enjoy!

Notes

For fresh herbs like rosemary for added flavor. Serve with crusty bread or a fresh salad. Store leftovers in an airtight container for up to 3 days.
