  • 1 pound Fresh spinach The star of the dish! Fresh is best, but frozen can be used if necessary.
  • 1 medium Onion, chopped Adds sweetness and depth.
  • 2 cloves Garlic, minced Enhances flavor and aroma.
  • 2 tablespoons Butter Rich flavor; can substitute with olive oil if desired.
  • 2 tablespoons Flour Thickens the creamy sauce.
  • 1 cup Milk or cream Whole milk is typical; heavy cream for richness.
  • to taste Salt and Pepper Essential for flavor enhancement.

Preparation

  • Rinse the spinach under cool water to remove any dirt.
  • Chop the onion and mince the garlic.

Cooking

  • In a large skillet, melt the butter over medium heat.
  • Add the chopped onions and cook until softened and translucent.
  • Stir in the minced garlic and sauté for about 1 minute until fragrant.
  • Sprinkle the flour over the onion and garlic mixture, stirring constantly for 1-2 minutes to create a roux.
  • Gradually pour in the milk or cream, whisking constantly until the mixture thickens (about 3-5 minutes).
  • Add the fresh spinach a handful at a time, stirring until wilted.
  • Season with salt and pepper to taste.
  • Serve hot, garnished with a sprinkle of pepper or nutmeg.

Notes

For best results, do not overcook the spinach. Consider adding red pepper flakes for a kick, or Parmesan cheese for extra flavor.
