Preparation Steps

  • Gather all ingredients on your kitchen counter.
  • In a large pot, heat the olive oil over medium heat and sauté the diced onion for about 3-4 minutes until translucent.
  • Stir in the minced garlic and let it cook for another 30 seconds.
  • Add the Italian sausage to the pot, breaking it up with a wooden spoon, and cook for 5-7 minutes until browned.
  • Pour in the chicken or vegetable broth and crushed tomatoes, stirring well and bringing to a gentle boil.
  • Once boiling, toss in the broken lasagna noodles and cook according to package instructions until al dente, about 8-10 minutes.
  • Reduce the heat to low and stir in the heavy cream, ricotta, and mozzarella until melted smoothly into the soup.
  • Sprinkle in the grated Parmesan cheese and mix well.
  • Season to taste with salt and pepper.
  • Ladle the soup into bowls and garnish with fresh basil.

Notes

For added nutrition, you can toss in a few handfuls of spinach. Serve with warm, crusty bread or a classic Caesar salad.
