Ingredients
  

For the Casserole

  • 4 cups fresh broccoli florets Can substitute with frozen broccoli.
  • 2 cups shredded cheddar cheese The main cheese for melting.
  • 1 cup grated Parmesan cheese Adds tang and depth to the sauce.
  • 1 cup heavy cream Makes the sauce rich and creamy.
  • 1/2 cup milk Whole milk preferred, but skim is okay.
  • 3 tablespoons unsalted butter Essential for the cheese sauce.
  • 3 tablespoons all-purpose flour Used to thicken the sauce.
  • 1/2 teaspoon garlic powder Enhances flavor.
  • 1/2 teaspoon onion powder Adds depth to the dish.
  • to taste salt and pepper Season to your preference.
  • 1 cup breadcrumbs For a crispy topping.
  • 2 tablespoons olive oil Helps breadcrumbs crisp up.

Instructions
 

Preparation

  • Preheat your oven to 375°F (190°C).
  • In a large pot, bring water to a boil. Add broccoli florets and boil for about 3 minutes.
  • Transfer the broccoli to an ice bath to shock and stop the cooking process. Drain and set aside.

Making the Cheese Sauce

  • In a medium saucepan, melt the unsalted butter over medium heat.
  • Add flour and cook for about 1 minute, stirring constantly to form a roux.
  • Gradually whisk in milk and heavy cream until smooth.
  • Stir in the cheddar cheese, Parmesan cheese, garlic powder, onion powder, salt, and pepper until melted and thickened.

Assembling and Baking the Casserole

  • In a baking dish, spread the blanched broccoli evenly.
  • Pour the creamy cheese sauce over the broccoli.
  • In a small bowl, mix breadcrumbs with olive oil and sprinkle over the casserole.
  • Bake in the preheated oven for 20 to 25 minutes, or until the top is golden and bubbly.

Notes

For extra crispy topping, mix grated cheese with breadcrumbs. Taste the cheese sauce before pouring to adjust salt as needed. Pairs well with green salad or garlic bread.
