  • 1 medium head cauliflower, chopped into florets The star ingredient; fresh cauliflower adds a creamy texture.
  • 4 cups vegetable or chicken broth Choose your favorite! It helps create that comforting soup base.
  • 1 cup heavy cream This is what makes the soup silky and rich.

Preparation

  • Start by washing and chopping your cauliflower into small florets. You want them to be uniform so they cook evenly.
  • Chop your onion and mince the garlic while you're at it.

Cooking

  • Grab your favorite large pot and place it on the stove over medium heat. Add in the butter and olive oil, letting them melt together.
  • Once the butter is bubbling, toss in the chopped onion and sauté for about 3-5 minutes until it turns translucent.
  • Add minced garlic to the pot and stir for about 1 minute. Be careful not to let it burn.
  • Add your chopped cauliflower florets into the pot and give everything a good stir to combine.
  • Add your broth of choice and bring everything to a gentle boil.
  • Once it's boiling, reduce the heat and let it simmer for about 20 minutes until the cauliflower is tender.
  • After simmering, take your immersion blender and puree the soup until it’s creamy and smooth.
  • Add the heavy cream and mix thoroughly. Let it heat up for a few more minutes, but don’t bring it to a boil again.
  • Taste the soup and season it with salt and pepper to your liking.
  • Ladle the soup into bowls and sprinkle some fresh herbs on top to serve.

Notes

To ensure the best texture, make sure your cauliflower is cut into small, even florets. For added flavor, consider adding a pinch of nutmeg or a squeeze of lemon juice.
