  • 4 cups chicken broth For cooking the pasta.
  • 2 tbsp tomato paste For added richness.
  • 1/2 cup Parmesan cheese, grated To make the sauce creamy.

Cooking

  • In a large pot, heat olive oil over medium heat. Add the diced chicken and cook until browned.
  • Add chopped onions and minced garlic to the pot and sauté until the onions are translucent.
  • Stir in the sundried tomatoes and cook for an additional 2 minutes.
  • Add the chicken broth and bring to a simmer.
  • Stir in the pasta and cook according to package instructions until al dente.
  • Add in the spinach, tomato paste, and Parmesan cheese, stirring until the spinach is wilted and the sauce is creamy.
  • Season with salt and pepper to taste.
  • Serve hot.

Notes

Make sure not to overcook the chicken; it should be juicy and tender. Feel free to add other veggies, such as bell peppers or mushrooms, for extra flavor and nutrients. If you like a little spice, consider adding a pinch of red pepper flakes while cooking.
