  • 9 pieces lasagna noodles These are the backbone of your dish, providing structure and heartiness.
  • 2 cups cooked chicken, shredded Use rotisserie chicken for an easier option.
  • 2 cups spinach, chopped Adds color and nutrients.
  • 1 cup ricotta cheese Creamy and rich, gives the lasagna lovely texture.
  • 1 cup mozzarella cheese, shredded Use whole milk mozzarella for extra creaminess.
  • 1 cup parmesan cheese, grated Adds a nice salty flavor.
  • 2 cups white sauce (béchamel sauce) Make your own if possible for best results.
  • 1 piece onion, chopped Adds a sweet base flavor.
  • 2 cloves garlic, minced Essential for flavor.
  • Salt and pepper to taste These elevate your dish.
  • Olive oil for cooking Adds flavor and richness.

Instructions
 

Preparation

  • Preheat your oven to 375°F (190°C).
  • Boil a large pot of water and cook the lasagna noodles according to package instructions. Drain and set aside.
  • In a skillet over medium heat, pour a dash of olive oil and sauté the chopped onion and minced garlic until fragrant and translucent, about 3-5 minutes.
  • Stir in the chopped spinach and shredded chicken. Season with salt and pepper to your liking and cook for another 3-4 minutes.

Assembling

  • Spread a thin layer of white sauce at the bottom of a baking dish.
  • Place 3 lasagna noodles on top of the sauce.
  • Spread half of the chicken and spinach mixture over the noodles.
  • Dollop half of the ricotta cheese over the mixture and sprinkle with half of the mozzarella and parmesan cheeses.
  • Repeat the layers: noodles, remaining chicken mixture, and the rest of the cheeses.
  • Top with the last of the noodles and a generous spread of the white sauce. Sprinkle any leftover cheese on top.

Baking

  • Cover your dish with aluminum foil and bake for 25 minutes.
  • Remove the foil and bake for an additional 15-20 minutes until the cheese is bubbly and golden brown.
  • Let the lasagna cool for about 10 minutes before slicing.

Notes

Use fresh ingredients for best flavor. Let the lasagna cool before slicing to keep layers intact.
