For the Lasagna

  • 2 cups cooked chicken, shredded Use leftover chicken for convenience.
  • 2 cups spinach, chopped For added nutrients and color.

  • 2 cups mozzarella cheese, shredded Essential for that gooey top.
  • 3 cups white sauce Use homemade or store-bought.
  • 2 tablespoons olive oil For sautéing vegetables.

  • 2 cloves garlic, minced Enhances flavor.

  • Lasagna noodles Lasagna noodles Use traditional or no-boil noodles.

Preparation

  • Preheat your oven to 375°F (190°C).
  • In a large skillet, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until the onions are translucent, around 5 minutes.
  • Toss in the chopped spinach and cook until it has wilted, about 2-3 minutes.
  • In a separate bowl, combine ricotta cheese, grated parmesan cheese, salt, and pepper.

Assembling the Lasagna

  • Spread a layer of white sauce on the bottom of your baking dish.
  • Place a layer of lasagna noodles over the sauce.
  • Layer shredded chicken over the noodles, followed by the sautéed spinach and onion mixture.
  • Scoop the ricotta mixture over the chicken, then sprinkle mozzarella cheese on top.
  • Repeat the layering process until all ingredients are used, finishing with a layer of noodles topped with the remaining mozzarella cheese.
  • Pour any remaining white sauce over the top layer of noodles.
  • Cover the baking dish with aluminum foil, ensuring it doesn’t touch the cheese.
  • Bake in the preheated oven for about 30 minutes. Remove foil for the last 15 minutes for a golden top.
  • Let the lasagna rest for about 10 minutes before slicing.

Notes

You can use leftover rotisserie chicken for faster prep. Prepare a day in advance for best flavor blending. For extra creaminess, add cottage cheese in the layers.
