Cooking Steps

  • Heat a large pot over medium heat. Add a bit of olive oil and toss in the diced onion and minced garlic. Sauté them until they're translucent and fragrant.
  • Add the diced carrots, peas, and corn to the pot. Stir and let them cook for about five minutes.
  • Pour in the chicken broth and bring it to a gentle simmer.
  • Add your cooked and shredded chicken and stir well.
  • Slowly add in the heavy cream and stir to combine.
  • Add thyme, salt, and pepper to taste and let the soup simmer for about 10 more minutes.
  • While the soup simmers, consider baking some biscuits.
  • Ladle the soup into warm bowls and top each serving with a fresh biscuit.

Notes

For added richness, feel free to throw in some potatoes or mushrooms. If you have extra time, consider adding fresh herbs like rosemary.
