  • 1 cup Shredded Cheddar Cheese Generous handful.
  • 1 cup Shredded Pepper Jack Cheese For added flavor and spice.
  • 1/4 cup Fresh Cilantro For a burst of flavor.

For the Taquitos

  • 8 pieces Flour or Corn Tortillas Use whichever you prefer.
  • 1 cup Oil For frying, about an inch deep.

Instructions
 

Preparation

  • Preheat your frying oil while you prepare the filling.
  • In a mixing bowl, combine the cream cheese and sour cream until smooth.
  • Fold in the diced cooked chicken, cheddar cheese, and pepper jack cheese until well combined.

Assembly

  • Grab a tortilla, place a spoonful of the chicken mixture near one edge, and roll it tightly.
  • Repeat with remaining tortillas.

Frying

  • Heat oil in a large frying pan over medium heat.
  • Carefully place the taquitos seam-side down into the hot oil.
  • Cook for about 3-4 minutes on each side until golden brown and crispy.

Drain

  • Remove the taquitos and let them rest on paper towels to absorb excess grease.

Notes

To achieve perfect crispiness, ensure your oil is hot enough before frying the taquitos. Serve with guacamole, salsa, or a simple green salad for a delicious meal.
