Ingredients
  

For the Beef

  • 2 pounds beef chuck roast, cut into 2-inch cubes
  • 1 tablespoon olive oil
  • 1 whole onion, chopped
  • 3 cloves garlic, minced
  • 2 cups beef broth
  • 4 dried red chiles such as guajillo or ancho, stems and seeds removed
  • 1 cup sour cream
  • 1 teaspoon cumin
  • Salt and pepper to taste

For Assembly

  • Flour tortillas
  • Shredded cheese, for serving

Preparation

  • In a large pot, heat olive oil over medium heat. Add cubed beef and brown on all sides. Remove beef and set aside.
  • In the same pot, add onion and garlic, sauté until soft.
  • Add the dried chiles and beef broth, then bring to a simmer.
  • Return beef to the pot, cover, and simmer for 2-3 hours until the beef is tender.
  • Remove the beef, shred it, and set aside.

Sauce Preparation

  • Blend the sauce until smooth, then stir in the sour cream and cumin.

Assembly

  • Fill flour tortillas with shredded beef, roll them up, and place in a baking dish.
  • Pour the creamy sauce over the top and sprinkle with cheese.
  • Bake at 350°F (175°C) for 15-20 minutes until heated through.

Notes

Serve these burritos hot from the oven with optional toppings like chopped cilantro, diced tomatoes, or avocado slices. A side of rice and beans complements the dish perfectly. Let leftovers cool completely before storing in an airtight container, refrigerating for up to 3 days, or freezing wrapped tightly for 2-3 months. Marinate the beef overnight for more flavor and adjust the chiles for desired heat levels. For a vegetarian option, substitute beef with roasted veggies.
