For the Pie

  • 1/2 cup shredded coconut (optional for topping) Adds a delightful texture and extra coconut goodness!

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large mixing bowl, whisk together the coconut milk, heavy cream, sugar, eggs, cornstarch, vanilla extract, and salt until smooth and well-combined.
  • Fit the pre-made pie crust snugly into a pie dish or roll out your homemade crust and fit it in.
  • Gently pour the creamy coconut mixture into the prepared crust.
  • Bake the pie for about 30-35 minutes or until the custard is set but still a bit jiggly in the center.
  • Remove the pie from the oven and let it cool on a wire rack.
  • If desired, sprinkle shredded coconut on top.
  • Chill the pie in the refrigerator for at least two hours before serving.
  • Slice and serve to enjoy!

Notes

Make sure to whip the coconut mixture until really smooth for the best texture. Consider adding lime zest for a fresh zing. Pre-baking the crust can prevent sogginess. Serve with whipped cream or vanilla ice cream.
