Ingredients
  

Vegetables

  • 2 large cucumbers, diced Use fresh cucumbers for the best taste.
  • 3 cups cherry tomatoes, halved
  • 1 small red onion, thinly sliced

Dressing

  • 1 cup sour cream Can substitute with yogurt for a lighter version.
  • 2 tablespoons mayonnaise
  • 1 tablespoon apple cider vinegar Can be substituted with white wine vinegar or lemon juice.
  • 1 teaspoon garlic powder
  • Salt and pepper to taste Adjust according to your preference.

Garnish

  • Fresh dill or parsley for garnish (optional) Adds a fresh flavor if desired.

Preparation

  • In a large bowl, combine the diced cucumbers, halved cherry tomatoes, and sliced red onion.
  • In a separate bowl, mix together the sour cream, mayonnaise, apple cider vinegar, garlic powder, salt, and pepper until smooth.
  • Pour the dressing over the cucumber and tomato mixture and gently toss to coat.
  • Adjust seasoning with salt and pepper as needed.
  • Chill in the refrigerator for at least 30 minutes before serving.
  • Garnish with fresh dill or parsley if desired and serve.

Notes

Store any leftover salad in an airtight container in the refrigerator. Best enjoyed within 2-3 days. Salad may become watery over time due to cucumbers releasing moisture.
